Gronkjaer has developed a revolutionary band saw in collaboration with customers for this spinal cut (chine bone removal). This makes it possible to remove the spine with one operator sawing up to 1200 middles / hour. The loop shape of the band saw blade has several advantages over a circular saw solution. You can cut through feathers and ribs in one operation and with one person. The user can change the direction during the cut and thus always cut optimally close to the spine so as not to cut too far into the more valuable side. This solution is ingeniously simple and eliminates the need for expensive and high-maintenance processes involving optical analysis and robot technology.
HOW IT WORKS: GETTING MORE OUT OF THE DISASSEMBLY
With the Gronkjaer saw, a trained user can significantly outperform the highly technological robotic methods for removing the spine in terms of speed, yield and reliability. The saw can be used for both right and left middles. There is no need for time-consuming separation. The use of the thin band saw blade in comparison to thicker circular saw blades also increases the yield as the bone meal is reduced. The saw is extremely easy to install. In most cases, an existing cutting belt can be used, over which the saw is suspended by means of a spring balancer that compensates for the weight of the saw. This enables the user to bring the saw to the optimum height and angle in relation to the spine without exerting force, thus achieving a consistently high yield over long periods of time with little fatigue and minimizing cutting losses. To increase safety, the saw is equipped with a 2-hand safety circuit which only starts the saw when the user presses both switches on the handles simultaneously.

THE SPINAL INCISION AT THE MID-SECTION: CHINE BONE REMOVAL

A special feature of "Danish cutting" is the removal of the spine when cutting the middles. This makes it much easier and quicker to cut the middles. Depending on the size of the company, several workstations can be saved compared to the conventional method and, in addition, the remaining work steps are much less tiring for the staff. The horizontal cut to remove the spinal column offers the challenge of leaving as little meat as possible on the spinal column in order to increase the yield. With conventional circular saws, only a straight cut is possible, which leads to high losses. With 2 saws, the yield can be increased by cutting from the rib and feather side, but the use of 2 saws causes high labor costs. Alternatively, there are automated robot solutions, which not only entail very high investments, but also immense maintenance costs.

Important to know:

Due to a very high wage level, the Danish meat industry is forced to minimize manual work steps or replace them with machines and robots. This has resulted in extremely efficient and standardized processes in pig cutting, also known today as "Danish cutting". These processes involve modified cuts that require corresponding tools/machines.

The ideal complement for the Chine Bone Cut

Regardless of whether a circular or band saw, manual or automatic chine bone saw is used - after the spine has been removed, bone and cartilage remnants remain on the midsection. These must then be removed with a trimmer handpiece. In order to maximize the yield of this cut, GECO has developed a particularly small knife (ribtop ring knife) with which the remnants can be easily removed, but which cuts out as little expensive meat between the cartilage as possible. This saves between 20g and 35g per cut. The savings quickly add up to a significant sum, so that the purchase of the trimmer pays for itself within a few weeks and then only the profit is maximized.

Many customers ask themselves this

Do I need special cutting bands to perform the spinal cut with the Chine Bone Saw?
NO - in most cases, the saw can be hung over an existing cutting belt using a spring balancer. The space required is relatively small
Can a user hold the heavy saw over a longer period of time and "keep up" high line outputs?
YES - the weight of the saw is balanced by the spring balancer. The user only has to guide the saw correctly to achieve the right cut, which requires a little practice.
Isn't it dangerous to use this saw?
The risk of injury is minimized by the 2-hand safety circuit, which requires the user to operate the switches in both handles in parallel. The saw may only be operated by trained personnel
Why is more yield achieved than with a circular saw, for example?
The band saw blade is optimally curved with the loop to cut through ribs and springs simultaneously. The band saw blade has a thinner thickness than a circular saw blade and therefore produces fewer bone chips. The band saw allows the user to make directional corrections during the cut, so with a little practice the user can always cut optimally close to the spine and leave more meat/weight on the valuable piece. This is not possible with a circular saw because it can only cut straight.
What is needed? Voltage, compressed air?
The saw requires 400V 50Hz three-phase current for the motor; a compressed air connection is required for the belt tensioning system
Does everything have to be procured from Denmark? Is the supply of spare parts and service guaranteed?
