The ideal complement for the Chine Bone Cut
Regardless of whether a circular or band saw, manual or automatic chine bone saw is used - after the spine has been removed, bone and cartilage remnants remain on the midsection. These must then be removed with a trimmer handpiece. In order to maximize the yield of this cut, GECO has developed a particularly small knife (ribtop ring knife) with which the remnants can be easily removed, but which cuts out as little expensive meat between the cartilage as possible. This saves between 20g and 35g per cut. The savings quickly add up to a significant sum, so that the purchase of the trimmer pays for itself within a few weeks and then only the profit is maximized.
